Made this for dinner tonight.I had used what was in my home. Frozen spinach squeezed dry, Mexican cheese blend, cream cheese, no feta. I added garlic and onion powder to spice blend. Had two breasts that sliced half horizontally and pounded thinner with a, mallet. Folded spinach mixture into eAch breast. Cooked in a toaster for 20 minutes at 350 degrees. Served with a salad. Hubby really liked. Will make again. I made this dish last night. I added onion, mushrooms and green pepper, reduced spinach and sautéed the vegetables before adding cheeses. I received great compliments from guests. Will definitely be using this recipe again! This was delicious, Although next time i’ll only use half the spinach the recipe Calls for. It was very good, just a little too much stuffing for the size of my chicken breasts. This chicken recipe was delicious! I’m not great in the kitchen but This was so easy to put together. The flavors are fantastic and was just as good the next day for lunch.
