Great muffins. They're pretty sweet so I leave out the caramels and make a caramel sauce for people to drizzle over the top. I have made these before, but now I found caramel chips so wanted to try them with those. They were really good, but on the sweet side. Next time I’d cut the sugar down just a bit. These are so good. I made them as stated in the recipe, except I added just a touch of nutmeg, cloves, and allspice. I also just stuck the caramel in the middle, and used a bit more apples. I used foil cupcakes liners and NO STICKING. Perfect and yummy. My children devoured them. I made these because I needed to use up 6 bananas that were going to have be thrown out if I didn’t make bread or muffins with them. these were by far, hands down, the greatest banana flavored muffin/bread/anything I have ever made. I had 6 bananas so I just doubled the recipe, so I was expecting to only get 20 muffins, However I got 24 regular-to-large size muffins, plus 12 mini muffins! I like to make my baked goods of any type quite large so I usually don’t get near as many servings as a recipe says I will. I was pleasantly surprised with these! (Don’t get me wrong, I’m not complaining that I got more than expected because they were so delicious!) These muffins were really easy to make! As for the flavor I’m indifferent. I’m not sure if I expected something sweeter or with more flavor, but something is missing. maybe the key is to use the maple glaze, which I skipped. I do however like that the crumble was made using melted butter. so much easier to make than others I’ve tried. I baked these as suggested and they came out of the oven perfectly. Love them. I would definitely make them again but I would make the into 14 or 15 muffins since they really puffed up and the crumble didnt stay on since the batter cam right up to the top of each muffin cup. I do like the topping and the taste of the muffin. I will definitely will cut up the apples next time since they were a bit big. I made these last night and they were just okay as written. I dipped the warm muffins in the butter and cinnamon sugar as directed but I didn’t care for the results. I made a second batch and put a simple streusel topping on before baking and they were delicious. The muffins themselves were very good last night but today (the leftovers) are very dry. I would like to continue to use this recipe as my guide for apple cinnamon muffins but I will experiment with the addition of another ingredient to try to make them a bit moister. My sister recommended trying some applesauce or maybe a vegetable shortening to replace some of the butter. I will report back. These muffins are amazing! I’ve been doing Low Carb for about 6 months and have tried numerous recipes with Almond Flour and Coconut Flour and haven’t really found a muffin that I loved until now. Most are very dry and the texture just isn’t right. These are so much like regular banana muffins! I love this recipe. The muffin was a little to flavorless for me so I’d suggest adding some cinnamon or vanilla extract to the batter other than that I loved it.  The topping was just the right amount of flour and sweets and the butter gave it a great flavor.  In the batter I added backing powder and baking soda bc the Ingredients said soda but the directions said powder sooo. And the glaze wasn’t white for me because I didn’t have pure vanilla extract so I doubled the vanilla. Over all it is a great muffin and it’s beginner friendly cuz I have never made muffins before. This is my favorite coffee cake muffin! I have been making it for several years. I make the crumb topping ahead of time and keep it in a ziploc bag in the freezer so I have it ready to go. Overall, an okay recipe. You can really taste the lemon in this one. I found the batter to be almost frothy, even though I mixed it by hand. I used fine almond flour, and it was very runny. They did not rise, and they baked in 20 min. Overall, the consistency is cake like, but the blueberries sunk to the bottom making the dough moist at the bottom. I would definitely try this again, perhaps adding some banana to thicken, and putting the blueberries closer to the top before baking. This muffin recipe is fantastic. The muffin came out soft and moist in the middle and a little biscuit crunch on the top and bottom and is really good. I just made these pumpkin muffins. They have a delicious taste but the texture is a bit firm and dense. I made sure not to over mix. Wonder if there was too much flour. I loved the addition of the coconut oil. I made these with butternut squash that I just baked I had added a little sugar to the squash when I scooped it out of the shell. Only added a small amount maybe 1/2 cup. The squash was sweet so needed only a little sugar. They are delicious. This was a wonderful recipe. Easy to make. I was worried about the 400 degree temp but I used a very large muffin tin which only made 6 but they turned out wonderfully and baked 20 mins.
