These were amazing! I doubled the recipe and added just a little extra flour since I prefer my batter a little thicker. I didn’t have any problems with the cinnamon mixture oozing out, it kind of sunk into the pancake during cooking. All three of my kids asked for seconds and we had a friend over who ate more than anyone. We had no leftovers. I’ll definitely make again (in larger quantities). I have made this for over 30 years. I boil the sugar mixture for 5 minutes. I place jn the oven for  5 minutes as well until the mixture is bubbly and the crackers appear to float in the toffee. I remove and immediately sprinkle either milk or semi sweet morsels on top and dan usually spread them after just a couple minutes. When the chips appear shiny they are as melted as they are gonna get, it’s time to spread them with a metal spatula all the way to the edges of the cookie sheet and sprinkle finely chopped pecans on top and place entire cookie sheet in the freezer for 15 minutes.  Works every time. This was the best cake in the world. The only things I added was I used 2 large apples (an apple per layer, because I can’t get enough apples!) and I made this cinnamon brown sugar glaze thing by melting 4 tbs of butter and adding the brown sugar and cinnamon to my liking. I just spread this mixture on top of the batter for each layer before adding the apples and crumbs. I found that this helped with spreading the top layer. Also, I added about 1/4-1/2 a cup of buttermilk because I thought my batter looked a bit dry.
