These were delicious! Thank you so much-it’s truly a treat. If you want a chewier cookie, bake them on parchment paper. The silpat cookies were more cakey (yes, I’m that weirdo who put a batch on each to see the difference). I’m not a huge sweets person anymore, but these really hit the spot. And making 24 allows me a “little” treat every now and again. Froze the baked cookies to prevent a disaster. For those who want to know the macros, this is what I got when I entered the recipe into LoseIt: (based on 24 cookies) 49 cal; 3.8g F; 5.6g total C; 2g P. LoseIt doesn’t eliminate the carb grams from Swerve, so if you don’t count them, you can eliminate 3.5g C from each cookie. So lemony and delicious. Some mentioned their apprehension about adding the ginger. Don't be! The ginger isn't stand out and it's not spicy / hot, I think it's enhanced the flavors. The cake was dense, but very moist! I didn't add the frosting, because like other reviewers, I don't think it was necessary and would have been way too sweet. It was delicious with just the glaze. Sometime in the last two weeks I was actually trolling the web for a low carb chocolate donut recipe, but I didn’t ever find one I wanted to try. And now here is this recipe! Thank you! I just made them. I followed all of your directions for the donought, but I made a different topping for them. I don’t like swerve-based glazes for some odd reason, so instead I melted coconut oil and lilly’s chocolate chips and added a bunch of cocoa, stevia, vanilla and a tiny pinch of salt. I’ve been eating Keto for about a year and a half. These were my first try at a Keto chocolate chip cookie, and my first review ever of a recipe. I made them exactly like the recipe but added about a cup of pecans. These were absolutely delicious. I’ve made these twice. The first time I followed the recipe exactly as written, and they were fantastic. I just made them again, but added some chopped walnuts, and they were even better! My family eats them too even though they aren’t following a low carb diet. I love that you can dump everything in a bowl and quickly make cookies. I made this cake using 8″ springform pan and lined the bottom with parchment paper. Cut around the bottom leaving just enough so i could pull ii gently on cooling rack. This recipe made 2 thin awesome cakes (left in oven exactly 20 mins and next time i will double the recipe). I also added 1 TBS instant Esspresso and 1 additional TBS Swerve. For the divine icing, i also added 1 TBS instant Esspresso and extra swerve to taste an a pinch of salt. It is a big hit in my household, I will definitely keep making this cake. This turned out amazing! The taste is addictive. I don’t know if I would have self control other than the fact it is so rich. Right out of the ice cream machine it was very smooth and fluffy. This morning after being in the freezer (yes I said morning) it is very hard. So, I’ll try with more mct or vegetable glycerin. Either way a quick sit on the counter and it will soften. I just made this and it’s yummy. I used half Swerve and half stevia and vodka instead of mct oil. I also added cake batter flavoring and no nuts. Very tasty and firmed up nicely but it was gritty. Not sure why. I used an ice cream maker. I didn’t use choczero but stevia. Maybe that was it. I guess next time I can try liquid stevia to see if that helps. I made these for my dad's birthday tonight and they are the bomb! Unfortunately I overcooked the "sweetened condensed milk" mixture, didn't have time to make more so I just rolled with it, and they still turned out amazing. I also do not own any cast iron (I know gasp) but a baking dish worked well! I'm pretty sure as badly as I screwed up that these are pretty fail proof. I made the peanut butter cookies, and used pyure sweetener. I also used smuckers organic all natural peanut butter, and threw in some hershey's sugar free chocolate chips. I tried this recipe and it was delish! I didn’t use the whipping cream and the cookie still didn’t crumble. I mixed natural Splenda and Brown Sugar Splenda. I didn’t use as much as the recipe called for. I really liked the taste. ALso, there wasn’t any after taste like most sugar free cookies. I made this today for Thanksgiving. my first time using Swerve. I’m not a fan of the cooling effect, but it’s worth the sacrifice for a yummy treat. My topping practically evaporated once the heavy whipping cream was added – not a bad thing, it made a almost candy like topping vs a wet caramel one. I made this recipe and they were delicious. I let mine bake just a bit longer than recommended and had no problems with crumbling. I also find that many keto baking recipes don’t seem done with the time specified. Very good. I added some lemon juice, since I had a lemon, and that was a very good add. With the additional liquid they did not turn out very crispy, still very good. I want to try these again, but with lemon zest instead of juice, and flatten a little more before baking. Made this for my church Christmas Potluck. Flavors were amazing but dish was a soupy mess, even after refrigerating for almost 24hrs. If I make again, i will not add almond milk to pudding and make 1.5-2x more of the whipped cream. I didn’t have enough with the recipe amount and had to run to store for more heavy whipping cream.
