I spent 40 dollars and purchased a cast iron skillet just for this recipe and I think it only made the dish even better. Using the skillet for everything now. worth every penny. This was amazing. People look at me and say ” I don’t eat thighs”. You will if you try this. I absolutely love this recipe! I’ve made it 3 or 4 times in the last month. This was incredibly good. I picked this recipe since I had all the ingredients on hand. Many recipes called for cardamom pods, which I could not find in the supermarket. I made this twice. The first time I pounded out the chicken and then marinaded in buttermilk. The second time I skipped it. I really think it tasted better the first time. Also, I used fresh ginger. I find that the acidity of the lemon juice makes the spinach turn very dark and lose it’s beautiful green color so instead I steam the spinach separately and serve the chicken over or on the side of it. I have also cut the heavy cream to 1/4 cup to keep the dish lower fat and still tastes great.
