I made this recipe tonight with huge thick chicken breasts. It took about 35 minutes to get it up to the right temp because they were so big. I also didn’t have any paprika so I used just a bit of chipotle. This was hands down the best chicken I have ever fixed. My husband and son loved it even more than I did. This chicken recipe is so versatile and delicious! I have made this a few times and it’s always a hit. I’ve tried the different seasoning variations and they are all amazing but the original is my go to. Love how tender this chicken always turns out. I added mushrooms and peas after precookong potatoes, Chef Prudhomme spice to chicken breasts which I butterflied and nestled, and used a Parmesan petal mixture with three Italian cheeses for the final step. It was awesome. Wish I could share the photo. I fried the chicken cubes for 5 mins with the fresh garlic and a little olive oil, set aside and the juices that came off the chicken I then added to my Tupperware container with raw small pieces of cauliflower which I tossed around. I made this tonight. I made it in a 9×13 dish to directions. I have two servings left. There were three of us. I ate mine with cilantro( highly recommend ) and sour cream. It was easy, tasty, not spicy( picky husband) and definitely cured my tamale craving with almost no work at all. I've made this recipe a few times. Followed recipe 1st time I made it & found it too sweet using the box corn bread mix. The next time I made my own dry self rising corn bread mix (found on the web) I added 1 tablespoon of sugar and 1 tablespoon of canola oil and followed the rest of the recipe instr. I also mixed the chicken with the enchilada sauce b4 putting it on the corn bread. In addition to the cheese, I also added black olives and chopped green onion. With my modifications, this is a great casserole. I made this chicken exactly as the recipe says and it came out perfectly. The meat had a very lovely flavour and was soft and tender. The foil-covering step is important to get a nice tender result. I just finished making this and tried a bite and ended up eating the whole breast. Definitely the best honey mustard chicken I have ever had. This is now my favourite chicken dish. I made one slight change. I seared it in a cast iron skillet then removed the chicken and added the sauce and chicken back to the skillet and baked as instructed. i just wanted less dishes. Amazing chicken recipe, the whole family enjoy it. I used chicken cutlets and doubled the recipe. I used cream cheese with chives and left out the peppers. It was delicious. Very easy to make. A very good recipe. I used baby spinach leaves instead of the green pepper and used my homemade tomato sauce and it turned out amazing! I also used toothpicks to hold the chicken closed. My chicken didn't look as perfect as the picture but the taste certainly made up for it! I made these potatoes for Christmas dinner and they were a hit! I added extra butter/ margarine and only had a little sour cream in house so I added some half and half. Awesome!
