I made these last night and my crust portion is way too greasy. It won’t hold together. Seems like too much butter. They taste good but next time I’ll use half the amount of butter. I added an 8oz block of cream cheese to the filling, and zested all 3 lemons into the mixture. This turned out amazing! The taste is addictive. I don’t know if I would have self control other than the fact it is so rich. Right out of the ice cream machine it was very smooth and fluffy. This morning after being in the freezer (yes I said morning) it is very hard. So, I’ll try with more mct or vegetable glycerin. Either way a quick sit on the counter and it will soften. I just made this and it’s yummy. I used half Swerve and half stevia and vodka instead of mct oil. I also added cake batter flavoring and no nuts. Very tasty and firmed up nicely but it was gritty. Not sure why. I used an ice cream maker. I didn’t use choczero but stevia. Maybe that was it. I guess next time I can try liquid stevia to see if that helps. I made the peanut butter cookies, and used pyure sweetener. I also used smuckers organic all natural peanut butter, and threw in some hershey's sugar free chocolate chips. I tried this recipe and it was delish! I didn’t use the whipping cream and the cookie still didn’t crumble. I mixed natural Splenda and Brown Sugar Splenda. I made this today for Thanksgiving. my first time using Swerve. I’m not a fan of the cooling effect, but it’s worth the sacrifice for a yummy treat.
