I spent 40 dollars and purchased a cast iron skillet just for this recipe and I think it only made the dish even better. Using the skillet for everything now. worth every penny. This was amazing. People look at me and say ” I don’t eat thighs”. You will if you try this. I absolutely love this recipe! I’ve made it 3 or 4 times in the last month. Made this recipe twice already. My family loved it! Made it with a side of pasta and rice. Added red pepper flakes on top for spice. My daughter typically doesn’t like the taste of lemons, so I was a little worried that she wouldn’t like it. She ended up gobbling it up and did her happy dance! My husband couldn’t get enough of it either and went back for thirds. I served it diced up and on fettucini, with a side of steamed broccoli. I would like to try with with chicken breasts like someone else did and take them out early. I love the how the thighs turned out and my hubby ate them but dark meat is not his favorite. It’s a great recipe. This chicken is truly delicious. I have made this recipe four or five times already it's definitely a keeper. It doesn't make much extra sauce so if you want some to scoop over potatoes or pasta you should double the sauce. I do love baking from scratch but I am all for using a cake mix at times. In fact, I think I prefer the texture of cake mix cakes most of the time! They are kind of no fail. This lemon cake sounds delicious. I have 3 young kids and I know they do not appreciate a good lemon dessert but I certainly do. I will have to wait for a special ocassion to arise where I can make this cake to share with others. If I made it and kept it at home, I would be the only one eating it and that just won't work! I find that the acidity of the lemon juice makes the spinach turn very dark and lose it’s beautiful green color so instead I steam the spinach separately and serve the chicken over or on the side of it. I have also cut the heavy cream to 1/4 cup to keep the dish lower fat and still tastes great.
